The fourth of July is the perfect time to make a new dessert and what is dessert without chocolate? This Lava cake is so easy, quick and looks festive with the blueberries and whipped cream. Speaking of whipped cream, one of my favorite things ways to change up a dessert, is to flavor the whipped cream! As some of you know, my son Levi, graduated from high school and will be leaving for college in August. One of his favorite flavors, is lemon. So, I decided to treat Levi with some lemon whipped cream! Below are the directions on how to make this fabulous dessert! Enjoy!
Ingredients for 6 servings
1 box of brownie mix
2-4 Dark Chocolate Dove Candies (Depending on the size of you baking dish)
1 egg
1 pint heavy whipping cream
1 pint blueberries
6 4 oz. ramekins
Directions:
In a large bowl, whisk together brownie mix, along with the ingredients listed on the back of the brownie mix box and then add one additional egg. For easier removal, spray ramekin lightly with coconut spray.
Spoon batter into the six ramekins, evenly. Place 2 Dove candies next to each other in the center of the dish and then place two more onto of the first two.
Place in ramekin with batter and Dove candies in the microwave and cook on full power for one minute, for one cake or 1 1/2 minutes for two cakes. Don’t cook more than two cakes at a time, the cakes won’t, “lava” like they are suppose to.
Run a knife around the edge of the ramekin, place a serving plate on top of the ramekin and flip over. Serve with blueberries and lemon whipped cream. (recipe below)
Lemon Whipped Cream:
Prepare lemon by running the palm of your hand over the center of the lemon to create a juicier lemon. Slice in half and set aside. Whip together Heavy Whipping Cream with a hand mixer until stiff. Add 2-3 heaping tablespoons of confectioners sugar and squeeze in one half of the lemon. Whip again until desired consistency. Be sure to taste before serving. Some lemons are juicer than others and you might need to add more lemon.
Serve Lava Cake with a generous dollop of lemon whipped cream and a pile of blueberries!
