Being in the mountains, you are amongst beauty, beyond believe. I really see why Katherine Lee Bates was inspired to write the Star Spangled Banner. Purple Mountains Majesty, what a wonderful way to describe the amazing mountains of Colorado and when I am on top of a mountain, I always feel closer to God. I take time to look around me. I look at the surrounding mountains, the clouds, the wild flowers, the rocks, the grass, the birds. To me, everything from atop a mountain is beautiful. The mountains are my most favorite place in the world.
Because the mountains are so inspiring to me, I decided to create a couple of free inspirational downloads for you. Maybe something to hang in your office at work, to help you get through the day. Or something to hang inside the pantry door or a cabinet. Somewhere you can take a quick peek when you are feeling like you are not getting anywhere. Avocado Dressing
One of my favorite things to do in Vail, other than hiking, is attending the Farmers Market on Sundays. It’s not just a farmers market, the are many, many types of Artisans! Painters, potters, photographers, bakers, food of all kind and music. It is a feast for the eyes, ears and mouth! The day we went, there was a band teaching kids how to play Jazz music! It was so much fun! My boys enjoyed the music (Jazz is one of their favorite genres) and authentic German Brats for lunch and I chose a made to order salad with Avocado dressing! The dressing really made the salad and when I got home, I decided to recreate the amazing, green liquid. Below is the recipe, give it a try and tell me what you think!
PLEASE NOTE: The ingredient quantities are approximate. Avocados vary in size, so you may have to add more olive oil or water to get it the consistency that you like for a dressing. So, when adding the liquids, add slowly!
